Instructions
- Bring the water and butter to a boil in a saucepan. Add flour and salt, stirring quickly until a dough forms and pulls away from the sides.
- Remove from heat and let it cool slightly. Beat in the eggs one by one until the dough is smooth and glossy.
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and spoon or pipe dough mounds spaced 2 inches apart.
- Bake for 20 to 25 minutes, or until golden and puffed. Do not open the oven door while baking.
- Whip the heavy cream with powdered sugar and vanilla until soft peaks form.
- Once cooled, slice open each puff and fill with whipped cream using a piping bag or spoon.
- Dust with extra powdered sugar if desired and serve chilled.
