- 3 medium carrots, sliced (or parsnips)
- 2 celery stalks, chopped (or add zucchini)
- 1 medium onion, diced (or shallots)
- 4 garlic cloves, minced
- 6 cups chicken broth (or vegetable broth)
- 2 cups egg noodles (or gluten-free pasta)
- 1 teaspoon thyme
- 2 tablespoons chopped parsley
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add diced chicken, season with salt and pepper, and cook until browned, about 5-7 minutes.
- Add onion, carrots, and celery. Cook for 5 minutes, stirring occasionally, until softened.
- Stir in garlic and thyme. Sauté for 1 minute until fragrant.
- Pour in chicken broth and bring to a gentle boil. Reduce heat and simmer for 15 minutes.
- Add egg noodles and cook for 8-10 minutes until noodles are tender.
- Stir in chopped parsley. Taste and adjust seasoning with salt and pepper.
Notes
To make it creamy, add a splash of heavy cream before serving. This soup also freezes well; just leave out the noodles until reheating. You can mix in greens like spinach or kale for added nutrients.
