Ingredients

  • 1 cup cottage cheese (smooth and creamy; Greek yogurt can be used as an alternative)
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup honey or maple syrup
  • 1/4 cup melted coconut oil (or substitute with vegetable or canola oil)
  • 2 large eggs (room temperature)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips (optional but encouraged)

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch pan with parchment paper.
  2. In a bowl, mix cottage cheese, honey (or maple syrup), eggs, and vanilla extract until smooth. Use an immersion blender if needed.
  3. In a separate bowl, whisk cocoa powder, coconut oil, baking powder, and salt together.
  4. Combine the wet and dry ingredients and stir until just mixed.
  5. Fold in chocolate chips.
  6. Spread batter evenly in the prepared pan and bake for 25-30 minutes, or until a toothpick comes out mostly clean.
  7. Cool in pan for 10 minutes before lifting out and slicing into squares.

Notes

Avoid overmixing to keep brownies soft and fudgy. Let them cool completely to set. Optional add-ins: chopped walnuts, chia seeds, or flaxseed for added texture and nutrition.
