Instructions
- Preheat oven to 375°F (190°C) to ensure a golden, fluffy finish.
- In a bowl, whisk eggs, cottage cheese, salt, and pepper until smooth and combined.
- Heat olive oil in an oven-safe skillet over medium heat. Sauté diced vegetables for 5 minutes until tender.
