Cottage Cheese Frittata

  • Author: Navy Sinclair
  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Description

A fluffy, protein-packed frittata made with cottage cheese and your favorite veggies. Perfect for brunch or a light dinner, it’s simple to prepare and full of flavor.

Ingredients

Scale
  • 6 large eggs
  • 1 cup cottage cheese
  • 1 cup diced vegetables (such as bell peppers, spinach, or onions)
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 375°F (190°C) to ensure a golden, fluffy finish.
  2. In a bowl, whisk eggs, cottage cheese, salt, and pepper until smooth and combined.
  3. Heat olive oil in an oven-safe skillet over medium heat. Sauté diced vegetables for 5 minutes until tender.
  4. Pour the egg and cottage cheese mixture into the skillet. Cook undisturbed for 3 minutes, letting the edges start to set.
  5. Top with shredded cheese and transfer the skillet to the oven. Bake for 20 to 25 minutes until the center is firm and the top is lightly golden.
  6. Let it rest for a few minutes after baking. Slice and serve warm.

Notes

Feel free to change up the vegetables with seasonal options like zucchini or mushrooms. Add cooked ham or turkey for a meatier twist. You can even freeze slices for future meals, just reheat when ready to enjoy.
