- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 tablespoon olive oil (or melted butter)
- 1/4 cup water (adjust for dough consistency)
Instructions
- Mix cottage cheese, olive oil, and water in a bowl until smooth.
- In a separate bowl, combine flour, baking powder, and salt.
- Gradually add dry ingredients to the wet mixture and mix until a dough forms.
- Knead on a floured surface for a few minutes until smooth.
- Divide dough into 6 portions, roll into balls, and flatten to 1/4 inch thick discs.
- Heat a skillet over medium heat and cook each flatbread for 2-3 minutes on each side until golden and puffed.
Notes
Avoid over-kneading to keep the flatbread soft. Preheat the skillet well for best results. Freeze leftovers with parchment between layers.
