Ingredients

  • 1 cup cottage cheese (substitute with ricotta if needed)
  • 2 cups all-purpose flour (or whole wheat for a healthier option)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil (or melted butter)
  • 1/4 cup water (adjust for dough consistency)

Instructions

  1. Mix cottage cheese, olive oil, and water in a bowl until smooth.
  2. In a separate bowl, combine flour, baking powder, and salt.
  3. Gradually add dry ingredients to the wet mixture and mix until a dough forms.
  4. Knead on a floured surface for a few minutes until smooth.
  5. Divide dough into 6 portions, roll into balls, and flatten to 1/4 inch thick discs.
  6. Heat a skillet over medium heat and cook each flatbread for 2-3 minutes on each side until golden and puffed.

Notes

Avoid over-kneading to keep the flatbread soft. Preheat the skillet well for best results. Freeze leftovers with parchment between layers.
