Description

Ingredients

  • 2 cups cottage cheese (low-fat or full-fat, your choice)
  • 4 large eggs (or 2 eggs and 2 egg whites for a lighter version)
  • 1 cup chopped spinach (can be swapped with bell peppers or zucchini)
  • 1 cup shredded cheddar cheese (or your preferred cheese)
  • 1/2 teaspoon salt (adjust as needed)
  • 1/4 teaspoon black pepper (or red pepper flakes for a kick)
  • 1/2 teaspoon garlic powder (or use fresh minced garlic)
  • Olive oil for greasing the muffin tin

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a muffin tin with olive oil.
  2. In a mixing bowl, whisk together cottage cheese, eggs, salt, pepper, and garlic powder until smooth.
  3. Stir in chopped spinach and shredded cheddar until well combined.
  4. Divide the mixture into the muffin tin, filling each cup about two-thirds full.
  5. Bake for 20-25 minutes until the egg bites puff up and the edges are golden.
  6. Allow to cool slightly before removing from the tin using a butter knife.

Notes

Store in the fridge for up to 4 days in an airtight container. They freeze well and can be reheated quickly in the microwave. Try adding diced ham or cooked bacon for extra flavor.
