- 4 large eggs (or 2 eggs and 2 egg whites for a lighter version)
- 1 cup chopped spinach (can be swapped with bell peppers or zucchini)
- 1 cup shredded cheddar cheese (or your preferred cheese)
- 1/2 teaspoon salt (adjust as needed)
- 1/4 teaspoon black pepper (or red pepper flakes for a kick)
- 1/2 teaspoon garlic powder (or use fresh minced garlic)
- Olive oil for greasing the muffin tin
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a muffin tin with olive oil.
- In a mixing bowl, whisk together cottage cheese, eggs, salt, pepper, and garlic powder until smooth.
- Stir in chopped spinach and shredded cheddar until well combined.
- Divide the mixture into the muffin tin, filling each cup about two-thirds full.
- Bake for 20-25 minutes until the egg bites puff up and the edges are golden.
- Allow to cool slightly before removing from the tin using a butter knife.
Notes
Store in the fridge for up to 4 days in an airtight container. They freeze well and can be reheated quickly in the microwave. Try adding diced ham or cooked bacon for extra flavor.
