Description
Corn fritters are light, crispy, and packed with sweet bursts of corn, making each bite a little celebration. Perfect for a brunch or a simple side dish, they will quickly become a staple in your kitchen.

- 2 cups fresh or frozen corn
- 1 cup all-purpose flour
- 2 large eggs
- 1/2 cup milk
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped green onions
- Vegetable oil for frying
Instructions
- In a large mixing bowl, combine the flour, baking powder, salt, and black pepper. Whisk to mix the dry ingredients.
- In a separate bowl, whisk together the eggs and milk. Then gently fold into the dry ingredients to form a batter.
- Add the corn and chopped green onions into the batter and mix until combined.
- Heat a non-stick skillet over medium heat and add enough vegetable oil to coat the bottom. Once hot, spoon about 1/4 cup of batter for each fritter.
- Cook for 3-4 minutes on one side until golden brown. Flip and cook the other side for an additional 3-4 minutes until crispy.
- Remove from the skillet and place on a paper towel to drain excess oil. Keep warm in the oven while you finish the batch.
- Serve warm with your favorite dipping sauce or alongside a salad.
Notes
For extra flavor, consider adding smoked paprika or jalapenos. You can also freeze the fritters for later use.
