- 1/2 cup unsalted butter
- 1 cup all-purpose flour
- 1 teaspoon sugar
- 1/4 teaspoon salt
- 3 large eggs
- 1/2 cup cream cheese, softened
- 1/2 cup mini chocolate chips
- 1/2 cup powdered sugar (for dusting)
- Oil for frying (about 2 cups)
Instructions
- Bring water and butter to a boil in a medium saucepan. Stir in flour, sugar, and salt. Cook and stir over low heat until the mixture pulls into a dough ball, about 1 to 2 minutes.
- Remove from heat and let the dough cool for a bit. Beat in the eggs one at a time until the mixture is smooth and glossy.
- In a separate bowl, mix cream cheese with chocolate chips until well blended. Set aside as the filling.
- Pipe the churro dough into 6-inch lengths on parchment paper using a pastry bag with a large star tip.
- Heat oil in a pot or fryer over medium. Fry churros in hot oil until golden brown, 2 to 3 minutes per side. Drain on paper towels.
- Once cool enough, pipe the cookie dough cheesecake filling into each churro.
- Finish with a dusting of powdered sugar and enjoy them warm. Serve with a side of chocolate sauce for extra deliciousness.
Notes
To boost flavor, add a splash of vanilla extract to your dough. These churros also freeze well, store in an airtight container, and warm in the oven when ready to serve.
