- 2 (15 oz) cans sweet corn, drained (or substitute with frozen corn)
- 1 (8 oz) package cream cheese, softened
- 1/2 cup sour cream
- 1 cup shredded sharp cheddar cheese
- 1/2 cup cornbread mix
- 1/4 cup chopped green onions
- 1/2 teaspoon garlic powder
- Salt and pepper, to taste
- 1 cup crushed corn flakes (or crushed crackers for variation)
- 1/4 cup melted butter
Instructions
- Preheat oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish to prevent sticking.
- In a large mixing bowl, beat together softened cream cheese and sour cream until smooth. A hand mixer helps speed this up.
- Fold in drained corn, cheddar cheese, cornbread mix, green onions, garlic powder, salt, and pepper. Stir until fully combined.
- Transfer the mixture into the prepared baking dish and spread it evenly.
- In another bowl, toss crushed corn flakes with melted butter. Evenly sprinkle over the casserole.
- Bake for 30 to 35 minutes, or until the top is golden and the edges are bubbly.
Notes
To add more texture, toss in diced bell peppers or jalapeños. Make-ahead friendly: prep and refrigerate overnight, then bake when needed. Store leftovers in an airtight container in the fridge for up to 3 days.
