Description

This easy and creamy classic coleslaw is the crunchy sidekick your summer cookouts, picnics, and sandwiches have been craving. Made with crisp cabbage and carrots, and tossed in a tangy mayo-based dressing, it’s a refreshing dish that’s full of flavor and totally customizable.


Ingredients

  • 1 small head green cabbage, shredded (about 45 cups)
  • 2 large carrots, grated
  • 1 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon sugar
  • Salt and pepper to taste
  • Optional: 1/4 cup finely chopped onion or bell pepper

Instructions

  1. Combine the shredded cabbage and grated carrots in a large bowl. Toss until well mixed.
  2. In a separate bowl, whisk together the mayonnaise, apple cider vinegar, sugar, salt, and pepper until smooth and combined.
  3. Pour the dressing over the cabbage mixture and stir until everything is evenly coated.
  4. Cover the bowl with plastic wrap and chill in the fridge for at least 1 hour before serving for best flavor and texture.

Notes

Letting the coleslaw sit for an hour enhances the flavor and softens the cabbage slightly. You can add Dijon mustard to the dressing for extra zest or mix in some chopped nuts for a healthy crunch.
