  • 6 cups fresh blackberries (frozen works too, just thaw and drain)
  • 1 cup granulated sugar (adjust to taste)
  • 2 tablespoons cornstarch (for thickening)
  • 1 tablespoon lemon juice (brightens up the flavor)
  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter (melted)
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk

Instructions

  1. Preheat oven to 375°F (190°C) for the perfect golden crust.
  2. In a mixing bowl, gently toss blackberries with 1/2 cup sugar, cornstarch, and lemon juice. Let sit while prepping the batter.
  3. In another bowl, whisk flour, remaining sugar, baking powder, and salt. Add melted butter and milk. Stir just until combined; the batter will be thick.
  4. Grease a 9×13-inch baking dish and spread half the batter. Layer the blackberry mixture over it. Spoon remaining batter on top, leaving some gaps for a rustic look.
  5. Bake for 35–40 minutes, or until the top is golden and fruit is bubbly. Let cool slightly before serving.

Notes

For added warmth, mix in a dash of cinnamon to the batter. Frozen blackberries work great, just thaw and drain them. A sprinkle of coarse sugar on top adds a sweet crunch.
