- 6 cups fresh blackberries (frozen works too, just thaw and drain)
- 1 cup granulated sugar (adjust to taste)
- 2 tablespoons cornstarch (for thickening)
- 1 tablespoon lemon juice (brightens up the flavor)
- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter (melted)
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup milk
Instructions
- Preheat oven to 375°F (190°C) for the perfect golden crust.
- In a mixing bowl, gently toss blackberries with 1/2 cup sugar, cornstarch, and lemon juice. Let sit while prepping the batter.
- In another bowl, whisk flour, remaining sugar, baking powder, and salt. Add melted butter and milk. Stir just until combined; the batter will be thick.
- Grease a 9×13-inch baking dish and spread half the batter. Layer the blackberry mixture over it. Spoon remaining batter on top, leaving some gaps for a rustic look.
- Bake for 35–40 minutes, or until the top is golden and fruit is bubbly. Let cool slightly before serving.
Notes
For added warmth, mix in a dash of cinnamon to the batter. Frozen blackberries work great, just thaw and drain them. A sprinkle of coarse sugar on top adds a sweet crunch.
