- 4 cups chicken or vegetable broth
- 1 tablespoon olive oil

Instructions
- Rinse the rice thoroughly under cold water until the water is clear to eliminate excess starch and achieve fluffy grains.
- Heat olive oil in a large pot over medium heat. Stir in the rinsed rice and toast for a couple of minutes.
- Add broth to the pot and bring to a boil. Lower the heat, cover, and let simmer for about 18 minutes or until fully cooked and liquid is absorbed.
- Once cooked, fluff the rice with a fork. Mix in lime juice, chopped cilantro, and salt. Stir until evenly combined and serve.
Notes
