  • 2 cups long-grain white rice (serves 6-8)
  • 4 cups chicken or vegetable broth
  • 1 tablespoon olive oil
  • 4 tablespoons fresh lime juice
  • 1 cup fresh cilantro, chopped
  • Salt to taste
  • Optional: lime wedges for garnish

Instructions

  1. Rinse the rice thoroughly under cold water until the water is clear to eliminate excess starch and achieve fluffy grains.
  2. Heat olive oil in a large pot over medium heat. Stir in the rinsed rice and toast for a couple of minutes.
  3. Add broth to the pot and bring to a boil. Lower the heat, cover, and let simmer for about 18 minutes or until fully cooked and liquid is absorbed.
  4. Once cooked, fluff the rice with a fork. Mix in lime juice, chopped cilantro, and salt. Stir until evenly combined and serve.

Notes

For extra flavor, consider adding a pinch of cumin or chili powder while toasting the rice. To turn this into a meal, mix in black beans and corn. Store leftovers in an airtight container for up to 3 days and reheat with a splash of water.
