- 200g dark chocolate (70% cocoa), finely chopped
- 4 large eggs, separated
- 1/4 cup granulated sugar, plus a little extra for egg whites
- 1 cup heavy cream, chilled
- 1 teaspoon vanilla extract
- A pinch of salt
- Optional: cocoa powder or chocolate shavings for garnish
Instructions
- Melt the dark chocolate using a double boiler or microwave in 20-second bursts, stirring until smooth. Let cool slightly.
- In a mixing bowl, whisk egg yolks with sugar until pale and creamy. Stir in the melted chocolate and vanilla extract until well combined.
- Whip the heavy cream in a separate bowl until soft peaks form. Gently fold into the chocolate mixture to keep it light.
- In another clean bowl, beat egg whites with a pinch of salt until stiff peaks form. Carefully fold into the chocolate mix in thirds, keeping the texture airy.
- Spoon into individual dishes or a serving bowl. Cover and refrigerate for at least two hours to set.
- Before serving, dust with cocoa powder or sprinkle chocolate shavings if desired.
Notes
Let the melted chocolate cool before mixing with egg yolks to avoid scrambling. Be gentle when folding egg whites to preserve the mousse’s airy texture. Store leftovers covered in the fridge for up to 3 days. Also works great as a cake or tart filling.
