Ingredients

  • 1 cup heavy cream
  • 8 ounces dark chocolate, chopped (semisweet or bittersweet)
  • 1 tablespoon unsalted butter
  • 1 teaspoon vanilla extract

Instructions

  1. Heat the heavy cream in a small saucepan over medium heat, stirring occasionally. Remove just before it begins to boil.
  2. Pour the hot cream over the chopped chocolate in a heatproof bowl. Let it sit for 5 minutes to melt the chocolate.
  3. Add the butter and vanilla extract. Whisk gently until the mixture is smooth and glossy. Use a double boiler if needed to melt any remaining chocolate chunks.
  4. Let it cool at room temperature to thicken, or refrigerate for 15-20 minutes for quicker setting. Use as desired once it reaches the right consistency.

Notes

For a thicker ganache, let it cool longer or slightly increase the chocolate-to-cream ratio. Avoid overheating the cream and whisk gently to maintain a silky texture.
