Instructions
- Heat the heavy cream in a small saucepan over medium heat, stirring occasionally. Remove just before it begins to boil.
- Pour the hot cream over the chopped chocolate in a heatproof bowl. Let it sit for 5 minutes to melt the chocolate.
- Add the butter and vanilla extract. Whisk gently until the mixture is smooth and glossy. Use a double boiler if needed to melt any remaining chocolate chunks.
- Let it cool at room temperature to thicken, or refrigerate for 15-20 minutes for quicker setting. Use as desired once it reaches the right consistency.
Notes
For a thicker ganache, let it cool longer or slightly increase the chocolate-to-cream ratio. Avoid overheating the cream and whisk gently to maintain a silky texture.
