  • 1 cup whole milk
  • 4 oz dark chocolate (at least 70% cocoa), finely chopped
  • 4 large egg yolks
  • 1/2 cup granulated sugar (plus extra for caramelizing)
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 325°F (160°C). In a medium saucepan, combine heavy cream, whole milk, and dark chocolate over medium heat. Stir occasionally until chocolate is melted.
  2. In a separate bowl, whisk together egg yolks, granulated sugar, vanilla extract, and salt until pale and creamy.
  3. Gradually whisk warm chocolate mixture into egg mixture to temper without scrambling.
  4. Strain mixture through a fine mesh sieve and divide evenly into six ramekins.
  5. Place ramekins in a baking dish and pour hot water into dish until halfway up the sides of ramekins.
  6. Bake for 30-35 minutes until edges are set and centers are slightly jiggly. Cool and refrigerate for at least 2 hours or overnight.
  7. Before serving, sprinkle a thin layer of granulated sugar on top of each custard and caramelize with a kitchen torch or broil briefly in the oven. Watch closely to avoid burning.

Notes

Add a bit of espresso or orange zest for a unique twist. These can be prepared ahead and stored in the fridge until ready to serve. Don’t skip straining the custard—this ensures a velvety texture. Avoid overheating the chocolate to prevent seizing.
