  • 12 large Medjool dates (other varieties can work, but Medjool are the softest and sweetest)
  • 1 cup dark chocolate (aim for 60% cocoa or higher for best flavor)
  • A pinch of sea salt (for sprinkling)
  • Optional: fillings like almond butter, whole nuts, or shredded coconut (a handful as needed)

Instructions

  1. Slice each date lengthwise and remove the pit carefully without cutting all the way through.
  2. Fill each date with a bit of almond butter or a whole nut, if desired, for added flavor and texture.
  3. In a microwave-safe bowl, melt the dark chocolate in 30-second bursts, stirring in between until smooth.
  4. Dip each stuffed date into the melted chocolate, ensuring it’s completely coated. Let any excess drip off by tapping gently on the bowl’s edge.
  5. Place the coated dates on a baking sheet lined with parchment paper. Sprinkle a pinch of sea salt over each one while the chocolate is still warm.
  6. Chill the dates in the refrigerator for 30 minutes, or until the chocolate has fully set.

Notes

Roll the finished dates in crushed nuts or coconut before chilling for extra texture. Great as gifts or snacks. Any extra melted chocolate can be drizzled on fruit or popcorn.
