- 2 tablespoons cocoa powder
- 1 tablespoon sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup milk (or almond milk)
- 1 large egg
- 2 tablespoons melted butter or coconut oil
- 1 cup fresh or frozen cherries, pitted and halved
- 1/2 cup chocolate chips
Instructions
- In a large mixing bowl, whisk together the flour, cocoa powder, sugar, baking powder, and salt.
- In a separate bowl, combine the milk, egg, and melted butter. Pour the wet mixture into the dry ingredients and stir until just combined.
- Gently fold in the halved cherries and chocolate chips.
- Heat a lightly greased skillet or griddle over medium heat. Pour about 1/4 cup of batter per pancake and cook for 2-3 minutes or until bubbles form on top. Flip and cook another minute or until golden brown.
- Continue with remaining batter. Keep pancakes warm until ready to serve, and top with extra cherries, chocolate sauce, or whipped cream.
Notes
Avoid overmixing the batter to keep the pancakes light and fluffy. Add a splash of vanilla extract for extra depth of flavor. Store leftovers in the fridge for up to 3 days and reheat in the toaster.
