A bright and refreshing Chickpea Peach Salad that combines the natural sweetness of ripe peaches with hearty chickpeas and crisp vegetables. It’s perfect for summer meals, easy to prepare, and full of flavor and nutrition.
Ingredients

- 1 can of chickpeas, drained and rinsed
- 2 ripe peaches, diced (or nectarines)
- 1 small red onion, diced
- 1 cucumber, diced
- 1 bell pepper (any color), diced
- 1/4 cup fresh mint, chopped (or basil)
- 2 tablespoons olive oil
- 1 tablespoon apple cider vinegar
- Salt and pepper to taste
Instructions
- Drain and rinse the chickpeas. Dice the peaches, red onion, cucumber, bell pepper, and chop the mint or basil.
- In a large mixing bowl, combine the chickpeas, diced fruits and vegetables, and herbs. Toss gently.
- In a separate bowl, whisk together the olive oil, apple cider vinegar, salt, and pepper.
- Pour the dressing over the salad and toss gently again to combine evenly.
- Let the salad rest for 10-15 minutes before serving to allow the flavors to blend. Serve chilled or at room temperature.
Notes
Add toasted sunflower or pumpkin seeds for crunch. If fresh peaches aren’t available, use well-drained canned or frozen peaches. A sprinkle of feta adds an extra savory touch.
