Ingredients

  • 8 ounces spaghetti (or your choice of pasta)
  • 2 cups shredded cooked chicken (rotisserie chicken works great)
  • 1 cup sliced mushrooms (fresh, canned, or frozen)
  • 1 cup frozen peas (or fresh)
  • 1 cup chicken broth
  • 1 cup heavy cream (or half-and-half for lighter version)
  • 1 cup grated Parmesan cheese (or a cheese blend)
  • 1 teaspoon garlic powder (or 2 fresh minced cloves)
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon Italian seasoning
  • 1 cup breadcrumbs

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a 9×13 inch baking dish.
  2. Cook spaghetti until al dente, then drain and set aside.
  3. In a large bowl, mix chicken, mushrooms, peas, garlic powder, onion powder, salt, pepper, Italian seasoning, and chicken broth. Stir in cream and half the Parmesan cheese.
  4. Add the spaghetti and toss until coated evenly.
  5. Spread the mixture into the baking dish. Top with remaining Parmesan and breadcrumbs.
  6. Bake for 30–35 minutes until the topping is golden and bubbly. Rest for a few minutes before serving.

Notes

Cook pasta just until al dente so it holds up during baking. Don’t skip the breadcrumb topping for that perfect crunch!
