- 2 cups of long-grain rice (or quinoa for a gluten-free option)
- 1 lb chicken breast, diced (shrimp can be used instead)
- 1 cup heavy cream (or half-and-half for a lighter touch)
- 4 cloves garlic, minced
- 1 cup chicken broth (homemade is best)
- 1/2 cup grated Parmesan cheese (Pecorino Romano adds extra flavor)
- 2 tablespoons olive oil (butter can also be used)
- Salt and pepper to taste
- Fresh parsley, chopped
Instructions
- Heat 1 tablespoon of olive oil in a large pot over medium heat. Add diced chicken, season with salt and pepper, and cook until golden and done, about 7-10 minutes. Set aside.
- Add the other tablespoon of olive oil and minced garlic to the same pot. Sauté for about a minute until fragrant, not burnt.
- Stir in the rice and toast for 2-3 minutes to enhance flavor.
- Pour in chicken broth, bring to a boil, then reduce heat. Cover and simmer for 18-20 minutes until rice is tender and liquid is absorbed.
- Return chicken to the pot, stir in heavy cream and Parmesan cheese. Mix until creamy and smooth.
- Top with fresh parsley, adjust seasoning, and serve warm.
Notes
For deeper flavor, marinate the chicken in lemon juice and herbs beforehand. It reheats well, making it great for meal prep. Add a pinch of red pepper flakes for a gentle heat.
