Ingredients
Scale
- 2 pounds boneless, skinless chicken thighs
- 1/4 cup soy sauce (or tamari for gluten-free)
- 2 tablespoons olive oil (or sesame oil for a nutty twist)
- 2 tablespoons brown sugar (or coconut sugar)
- 2 tablespoons lime juice (or substitute with lemon juice)
- 4 garlic cloves, minced
- 1 tablespoon ground cumin
- 1 tablespoon ground turmeric
- 1 teaspoon red pepper flakes (adjust to taste)
- Wooden or metal skewers (soak wooden skewers for 30 minutes)
Instructions
- Slice chicken thighs into small, bite-sized pieces for even grilling and better flavor absorption.
- In a mixing bowl, combine soy sauce, olive oil, brown sugar, lime juice, garlic, cumin, turmeric, and red pepper flakes.
- Toss the chicken in the marinade until fully coated, then cover and refrigerate for at least 1 hour or overnight for deeper flavor.
- Preheat your grill to medium-high. Thread chicken pieces onto skewers, spacing them slightly apart for even cooking.
- Grill the skewers for 10–15 minutes, turning occasionally, until the chicken is fully cooked and nicely charred.
Notes
Marinate as long as possible for max flavor. Don’t crowd the grill—spacing helps each skewer cook evenly and develop that perfect char.
