Ingredients

  • 1 pre-made pizza dough (or use homemade if preferred)
  • 1 cup cooked chicken breast, shredded
  • 1/2 cup pesto sauce
  • 1 1/2 cups shredded mozzarella cheese
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh basil leaves (optional, for garnish)

Instructions

  1. Preheat oven to 475°F (245°C). If using a pizza stone, place it in the oven now to heat.
  2. On a floured surface, roll the pizza dough out to roughly 12 inches wide. Move it to a parchment-lined pizza peel or baking sheet.
  3. Brush the dough lightly with olive oil. Spread pesto evenly over the surface, leaving a border for the crust.
  4. Top with shredded chicken, then sprinkle mozzarella, cherry tomatoes, and Parmesan over everything.
  5. Add a pinch of salt and pepper. Transfer to the hot pizza stone or place the baking sheet in the oven.
  6. Bake for 10–12 minutes, or until the crust is golden and cheese is bubbling.
  7. Let it cool slightly after baking. Add fresh basil if using, slice it up, and dig in.

Notes

Save time by using rotisserie chicken. A post-bake drizzle of pesto adds even more flavor. Customize with veggies like bell peppers or olives if you like!
