- 1 pre-made pizza dough (or use homemade if preferred)
- 1 cup cooked chicken breast, shredded
- 1/2 cup pesto sauce
- 1 1/2 cups shredded mozzarella cheese
- 1/4 cup cherry tomatoes, halved
- 1/4 cup grated Parmesan cheese
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh basil leaves (optional, for garnish)
Instructions
- Preheat oven to 475°F (245°C). If using a pizza stone, place it in the oven now to heat.
- On a floured surface, roll the pizza dough out to roughly 12 inches wide. Move it to a parchment-lined pizza peel or baking sheet.
- Brush the dough lightly with olive oil. Spread pesto evenly over the surface, leaving a border for the crust.
- Top with shredded chicken, then sprinkle mozzarella, cherry tomatoes, and Parmesan over everything.
- Add a pinch of salt and pepper. Transfer to the hot pizza stone or place the baking sheet in the oven.
- Bake for 10–12 minutes, or until the crust is golden and cheese is bubbling.
- Let it cool slightly after baking. Add fresh basil if using, slice it up, and dig in.
Notes
Save time by using rotisserie chicken. A post-bake drizzle of pesto adds even more flavor. Customize with veggies like bell peppers or olives if you like!
