Description

Ingredients

  • 8 ounces pasta (rotini or penne)
  • 2 cups cooked chicken, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1/4 cup black olives, sliced
  • 1/3 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste

Instructions

  1. Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Drain and rinse under cold water.
  2. In a large bowl, mix together the cooked chicken, cherry tomatoes, cucumber, red onion, and olives.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, Italian seasoning, salt, and pepper.
  4. Add the cooled pasta to the salad bowl. Pour over the dressing and toss well to coat everything evenly.
  5. Cover and refrigerate for at least 30 minutes to let the flavors blend before serving.

Notes

To keep the salad fresh for meal prep, store the dressing separately and mix before serving. Use rotisserie chicken for convenience and experiment with additional mix-ins like bell peppers or feta cheese.
