Description

This warm and cheesy chicken casserole is pure comfort food. With tender shredded chicken, creamy sauce, hearty veggies, and a golden cheddar topping, it’s a family-friendly dinner that’s both filling and easy to whip up on any weeknight.


Ingredients

  • 3 cups cooked chicken, shredded
  • 2 cups cooked rice
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 cup shredded cheddar cheese (plus extra for topping)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a 9×13 inch baking dish with olive oil.
  2. In a large bowl, mix together shredded chicken, cooked rice, cream of chicken soup, sour cream, and frozen vegetables. Season with garlic powder, onion powder, salt, and pepper. Stir until well combined.
  3. Spread the mixture evenly in the prepared baking dish. Sprinkle with shredded cheddar cheese, adding a little extra on top if desired.
  4. Bake for 25-30 minutes until bubbly and golden brown on top.

Notes

If using pre-cooked or rotisserie chicken, make sure it’s just cooked through and not overdone. Leftovers can be refrigerated for up to 3 days. You can also freeze before baking—just add 15 minutes to the bake time when cooking from frozen.
