- 3 cups cooked chicken, shredded
- 2 cups cooked rice
- 1 can (10.5 oz) cream of chicken soup
- 1 cup sour cream
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 1 cup shredded cheddar cheese (plus extra for topping)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat oven to 350°F (175°C) and lightly grease a 9×13 inch baking dish with olive oil.
- In a large bowl, mix together shredded chicken, cooked rice, cream of chicken soup, sour cream, and frozen vegetables. Season with garlic powder, onion powder, salt, and pepper. Stir until well combined.
- Spread the mixture evenly in the prepared baking dish. Sprinkle with shredded cheddar cheese, adding a little extra on top if desired.
- Bake for 25-30 minutes until bubbly and golden brown on top.
Notes
If using pre-cooked or rotisserie chicken, make sure it’s just cooked through and not overdone. Leftovers can be refrigerated for up to 3 days. You can also freeze before baking—just add 15 minutes to the bake time when cooking from frozen.
