- 1 lb boneless, skinless chicken breasts
- 2 cups cooked rice (white, brown, or cauliflower)
- 1 can black beans, drained and rinsed
- 1 cup corn (canned or frozen)
- 1 cup diced tomatoes (fresh or canned)
- 1 avocado, diced
- 1/2 cup shredded cheese (cheddar or Mexican blend)
- 1/4 cup fresh cilantro, chopped
- 1 lime, juiced
- 1 tablespoon olive oil
- 1 tablespoon taco seasoning
- Salt and pepper, to taste
Instructions
- Heat olive oil in a large skillet over medium heat. Season chicken with taco seasoning, salt, and pepper, and cook for 6–7 minutes per side until done. Let it rest, then slice into pieces.
- Cook rice according to package directions if not already done. For cauliflower rice, sauté in a separate pan for 5 minutes.
- Layer serving bowls with rice, then add black beans, corn, tomatoes, and sliced chicken.
- Top each bowl with avocado, shredded cheese, and cilantro. Finish with a squeeze of lime juice.
- Serve right away and enjoy your fresh, homemade Chicken Burrito Bowl.
Notes
For extra flavor, marinate chicken in lime juice and taco seasoning ahead of time. This bowl is great for meal prep and stores well in the fridge for up to 3 days. Avoid overcooking the chicken to keep it juicy.
