Description

Ingredients

  • 12 oz penne pasta (or rotini/fettuccine)
  • 2 cups cooked chicken, diced (rotisserie works great)
  • 6 slices bacon, cooked and crumbled (or turkey bacon)
  • 1 cup ranch dressing
  • 1 cup shredded mozzarella cheese (or cheddar)
  • 1/2 cup grated parmesan cheese
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Cook pasta according to package directions, drain, and set aside.
  2. In a large skillet, heat diced chicken and crumbled bacon over medium heat.
  3. Stir in ranch dressing, garlic powder, salt, and pepper. Mix until coated and heated through.
  4. Add cooked pasta and gently toss to coat in the sauce.
  5. Sprinkle mozzarella and parmesan on top. Cover and cook 2-3 minutes until cheese melts.
  6. Remove from heat and garnish with chopped green onions before serving.

Notes

For a lighter version, use turkey bacon, reduced-fat ranch, or whole grain pasta. You can also mix in veggies like spinach or bell peppers.
