- 12 ounces pasta (spaghetti or your favorite)
- 1 pound chicken breast, diced
- 1 pound shrimp, peeled and deveined
- 4 ounces pancetta or bacon, diced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 3 garlic cloves, minced
- 2 large eggs
- Salt and pepper, to taste
- Fresh chopped parsley, for garnish
Instructions
- Cook pasta following package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.
- In a large skillet, cook pancetta or bacon on medium heat until crispy. Remove and set on paper towels. Keep the drippings in the pan.
- Add diced chicken to the skillet and cook until golden and cooked through, around 6–8 minutes. Stir in shrimp and garlic, and cook until shrimp turn pink, about 3–4 minutes.
- In a bowl, whisk together eggs, heavy cream, Parmesan cheese, salt, and pepper until combined.
- Add the cooked pasta into the skillet with chicken and shrimp. Pour in the egg mixture.
- Toss everything together over low heat, adding reserved pasta water little by little until a creamy sauce forms. Stir in crispy pancetta.
- Serve warm, topped with chopped parsley and extra Parmesan if you like.
Notes
Add a splash of white wine with the chicken for extra flavor. Toss in spinach or peas for color and a nutrition boost. You can easily double or halve this recipe depending on your needs.
