Chicken Shrimp Carbonara

Description

A comforting fusion of creamy carbonara with tender chicken and juicy shrimp, this dish is perfect for weeknight dinners or impressing your guests.


Ingredients

  • 12 ounces pasta (spaghetti or your favorite)
  • 1 pound chicken breast, diced
  • 1 pound shrimp, peeled and deveined
  • 4 ounces pancetta or bacon, diced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 3 garlic cloves, minced
  • 2 large eggs
  • Salt and pepper, to taste
  • Fresh chopped parsley, for garnish

Instructions

  1. Cook pasta following package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.
  2. In a large skillet, cook pancetta or bacon on medium heat until crispy. Remove and set on paper towels. Keep the drippings in the pan.
  3. Add diced chicken to the skillet and cook until golden and cooked through, around 6–8 minutes. Stir in shrimp and garlic, and cook until shrimp turn pink, about 3–4 minutes.
  4. In a bowl, whisk together eggs, heavy cream, Parmesan cheese, salt, and pepper until combined.
  5. Add the cooked pasta into the skillet with chicken and shrimp. Pour in the egg mixture.
  6. Toss everything together over low heat, adding reserved pasta water little by little until a creamy sauce forms. Stir in crispy pancetta.
  7. Serve warm, topped with chopped parsley and extra Parmesan if you like.

Notes

Add a splash of white wine with the chicken for extra flavor. Toss in spinach or peas for color and a nutrition boost. You can easily double or halve this recipe depending on your needs.
