A warm, rustic Greek-inspired chicken dish infused with roasted chestnuts, fresh herbs, and rich garlic flavor. Perfect for cozy dinners or elegant gatherings.

- 4 boneless, skinless chicken breasts (or thighs for more juiciness)
- 1 cup roasted chestnuts, roughly chopped
- 3 tablespoons minced garlic
- 2 tablespoons olive oil
- 1 tablespoon chopped fresh oregano (or 1 teaspoon dried)
- 1 tablespoon chopped fresh thyme (or 1 teaspoon dried)
- 1 lemon, juiced and zested
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions
- Preheat your oven to 400°F (200°C) to get a nice golden finish on the chicken.
- In a large bowl, mix olive oil, lemon juice and zest, garlic, oregano, thyme, salt, and pepper.
- Add the chicken and coat well. Let it marinate for at least 15 minutes.
- Transfer the chicken to a baking dish and sprinkle chopped chestnuts on top.
- Bake for 25–30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
- Let rest for 5 minutes before slicing. Garnish with fresh parsley.
Notes
Leftovers are great in wraps or tossed into salads. You can swap in rosemary or dill depending on what herbs you have. Add a pinch of red pepper flakes if you want some heat.
