  • 2 cups cooked and shredded boneless, skinless chicken breasts (rotisserie chicken works well)
  • 2 cups shredded sharp cheddar cheese (mix with mozzarella if desired)
  • 1 can cream of chicken soup (or homemade)
  • 1 cup milk (can substitute almond or soy milk)
  • 2 cups frozen mixed vegetables (e.g., carrots, peas, and corn)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional garnish)

Instructions

  1. Cook rotini according to package directions until al dente. Drain and set aside.
  2. In a large bowl, mix together the cooked chicken, cream of chicken soup, and milk until smooth.
  3. Add the cooked pasta and frozen vegetables to the bowl. Season with garlic powder, onion powder, salt, and pepper. Stir to combine well.
  4. Fold in the shredded cheese until fully incorporated, then transfer everything to a greased 9×13 inch baking dish.
  5. Preheat oven to 350°F (175°C). Bake uncovered for 20–25 minutes or until cheese is melted and bubbly.
  6. Let it rest for a few minutes before serving. Garnish with chopped parsley if desired.

Notes

Don’t overcook the pasta since it continues to bake in the oven. Taste and season as you go, and save a bit of cheese for topping to get that irresistible golden crust. You can prep this dish ahead or even freeze it unbaked for later convenience.
