Description

These crispy, creamy, and cheesy ranch potatoes are the ultimate comfort food side dish. A guaranteed hit at any table, they’re simple to whip up and packed with flavor.


Ingredients

  • 4 large russet potatoes, diced (Yukon Gold can be used for a creamier bite)
  • 1 packet (1 oz) ranch seasoning mix
  • 1 cup sour cream (or Greek yogurt for a lighter option)
  • 1 cup shredded cheddar cheese (or your preferred cheese blend)
  • 1/2 cup chopped green onions (for topping)
  • Salt and pepper, to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 400°F (200°C) and grease a large baking dish with olive oil.
  2. Chop the potatoes into small cubes and place them in the dish. Toss with olive oil, salt, and pepper until evenly coated.
  3. Bake the potatoes for 25-30 minutes, stirring halfway through, until they are golden and crispy.
  4. In a separate bowl, mix sour cream and ranch seasoning until smooth. Set aside.
  5. Once the potatoes are done, take them out and pour the ranch mixture over. Mix gently to coat.
  6. Top with shredded cheese and return to the oven for 10-15 minutes until the cheese is bubbly and melted.
  7. Garnish with chopped green onions and serve hot.

Notes

Want a spicy twist? Add diced jalapeños or a sprinkle of smoked paprika before baking. Great as leftovers too – just reheat in the oven for the best texture.
