- 4 large russet potatoes, diced (Yukon Gold can be used for a creamier bite)
- 1 packet (1 oz) ranch seasoning mix
- 1 cup sour cream (or Greek yogurt for a lighter option)
- 1 cup shredded cheddar cheese (or your preferred cheese blend)
- 1/2 cup chopped green onions (for topping)
- Salt and pepper, to taste
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 400°F (200°C) and grease a large baking dish with olive oil.
- Chop the potatoes into small cubes and place them in the dish. Toss with olive oil, salt, and pepper until evenly coated.
- Bake the potatoes for 25-30 minutes, stirring halfway through, until they are golden and crispy.
- In a separate bowl, mix sour cream and ranch seasoning until smooth. Set aside.
- Once the potatoes are done, take them out and pour the ranch mixture over. Mix gently to coat.
- Top with shredded cheese and return to the oven for 10-15 minutes until the cheese is bubbly and melted.
- Garnish with chopped green onions and serve hot.
Notes
Want a spicy twist? Add diced jalapeños or a sprinkle of smoked paprika before baking. Great as leftovers too – just reheat in the oven for the best texture.
