A family-favorite comfort dish, Cheesy Mexican Rice Casserole blends gooey cheese, bold spices, and tender rice into one irresistible bake. It’s an easy, flavorful dinner perfect for any night of the week.

- 1 cup uncooked rice (white or brown)
- 2 cups chicken broth
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn (fresh, canned, or frozen)
- 1 can (10 oz) diced tomatoes with green chilies
- 2 cups shredded cheese (cheddar, Monterey Jack, or pepper jack)
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- In a saucepan, cook rice with chicken broth. Bring to a boil, then cover and simmer until rice is tender, about 15–20 minutes.
- In a large bowl, mix black beans, corn, diced tomatoes, cumin, chili powder, salt, and pepper.
- Fluff the cooked rice and add it to the bowl. Stir in 1 ½ cups of shredded cheese.
- Transfer the mixture to the prepared dish and sprinkle with the remaining cheese.
- Bake for 20–25 minutes, or until cheese is melted and bubbly. Broil for 2–3 minutes if you like a crisp top.
- Let sit for a few minutes, then garnish with fresh cilantro and serve.
Notes
Add cooked chicken or ground beef for extra protein. Leftovers reheat well. Spice it up with jalapeños or hot sauce if you like a kick!
