- 1 cup uncooked rice (brown rice works too)
- 1 can (10.5 oz) cream of mushroom soup
- 2 cups shredded cheddar cheese (sharp is ideal)
- 1 cup beef broth
- 1 chopped onion
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 2 tablespoons olive oil (for sautéing)
Instructions
- Heat olive oil in a large skillet over medium heat and sauté the chopped onion until translucent. Add ground beef and cook until browned, breaking it up as it cooks. Season with garlic powder, salt, and pepper.
- Mix in uncooked rice, beef broth, and cream of mushroom soup. Simmer gently for 10 minutes, stirring occasionally.
- Preheat oven to 350°F (175°C). Once some of the liquid is absorbed, stir in 1 cup of cheddar cheese until melted and incorporated.
- Transfer mixture to a greased casserole dish, top with remaining cheddar cheese, and bake for 25-30 minutes until the top is bubbly and golden.
Notes
Avoid pre-cooking the rice – it needs to absorb the liquid while baking for a perfect creamy texture. Be sure not to overbake to keep the casserole moist and flavorful.
