Description
This cozy and hearty Cheesy Hamburger Soup with Potatoes is the ultimate comfort food. Creamy, cheesy, and loaded with ground beef and tender potatoes, it’s a bowl full of warmth and nostalgia that’s perfect for any day that needs a little extra love.
Ingredients
Scale
- 1 lb ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 medium potatoes, diced
- 4 cups beef broth
- 2 cups shredded cheddar cheese
- 1 cup milk
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1 cup frozen corn (optional)
Instructions
- In a large pot over medium heat, cook ground beef until browned, about 5-7 minutes. Drain excess fat, then add chopped onion and garlic. Sauté for another 3-4 minutes until onions are soft.
- Add diced potatoes, beef broth, salt, pepper, and paprika. Bring to a boil, then reduce heat and simmer for 15-20 minutes until potatoes are tender.
- Stir in milk and shredded cheddar cheese, stirring until cheese melts and soup is creamy and smooth.
- If using frozen corn, stir it in now. Let soup simmer for an additional 5 minutes, allowing flavors to blend.
- Serve hot, topped with extra cheese or herbs if desired. Perfect with crusty bread or a light salad.
Notes
Don’t overcook the potatoes or they’ll turn mushy. You can substitute ground turkey or chicken for a lighter version. Add jalapeños for heat or spinach for extra nutrition. Keeps well in the fridge for 3 days or freeze up to 3 months.
