Ingredients
Scale
- 4 cups corn kernels (fresh, frozen, or canned; fresh preferred)
- 1/2 cup unsalted butter
- 4 cloves garlic, minced
- 1 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- Fresh parsley or cilantro, chopped, for garnish
Instructions
- In a large skillet over medium heat, melt the butter until it begins to sizzle. Add garlic and sauté for about a minute until fragrant.
- Add the corn kernels and cook for 5 to 7 minutes, stirring occasionally, until the corn is tender and infused with garlic butter.
- Season with salt, pepper, and paprika. Mix well to evenly coat the corn.
- Take the skillet off the heat and sprinkle the cheddar and Parmesan cheese over the corn. Let it sit for a few minutes until the cheese melts.
- Top with chopped parsley or cilantro. Serve warm and enjoy!
Notes
To spice things up, toss in diced jalapeños. Try different cheeses like gouda or mozzarella for fun variations. Great as a make-ahead side, just reheat gently on the stove before serving.
