- 3/4 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/8 teaspoon salt
- 3 large eggs
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup grated carrots (about 2 medium)
- 1 cup cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon lemon juice
Instructions
- Preheat oven to 350°F (175°C). Line a 15×10-inch jelly roll pan with parchment paper and lightly grease it to avoid sticking.
- In a bowl, whisk flour, baking powder, baking soda, cinnamon, nutmeg, and salt together.
- In a separate bowl, beat eggs and granulated sugar until thick and pale. Mix in vanilla extract and shredded carrots.
- Slowly stir in the dry mixture until just combined.
- Spread the batter evenly into the prepared pan and bake for 15-20 minutes, or until the surface springs back when touched lightly.
- Let the cake cool for 5 minutes, then flip onto a clean towel dusted with powdered sugar. Gently remove the parchment paper.
- Roll the warm cake in the towel starting from the short end. Let it cool completely seam side down.
- To make the filling, beat cream cheese, powdered sugar, and lemon juice together until smooth.
- Once cooled, unroll the cake, spread the filling evenly, then re-roll (without the towel). Wrap in plastic wrap and refrigerate for at least an hour before slicing.
Notes
Roll the cake while it’s still warm to avoid cracking. Add a touch of orange zest to the filling or fold in chopped walnuts for extra flavor. Store in the fridge for up to 3 days.
