Ingredients

  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/2 cup raisins (optional)

Instructions

  1. In a large bowl, stir together oats, grated carrots, and optional nuts until evenly mixed.
  2. In a separate bowl, whisk almond milk, maple syrup, vanilla extract, cinnamon, ginger, nutmeg, and salt.
  3. Combine the wet and dry mixtures, stirring well to ensure everything is incorporated.
  4. Divide the mixture evenly into 6-8 mason jars or containers, seal, and refrigerate overnight.
  5. In the morning, stir and enjoy chilled or warmed for 30 seconds in the microwave. Top with extra nuts or yogurt if desired.
