- 1 pound rigatoni pasta
- 1 pound boneless, skinless chicken breasts, diced
- 1/2 cup unsalted butter
- 4 cloves garlic, minced
- 2 teaspoons Cajun seasoning (adjust to taste)
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- Salt and pepper, to taste
- Chopped fresh parsley, for garnish
Instructions
- Bring a large pot of salted water to a boil and cook rigatoni until al dente. Drain and set aside.
- In a skillet, melt 2 tablespoons of butter over medium heat. Add chicken, season with salt, pepper, and Cajun seasoning, and cook until golden and fully cooked, about 6-8 minutes. Remove chicken from skillet.
- In the same skillet, melt remaining butter. Stir in minced garlic and sauté for about 1 minute until fragrant. Add heavy cream and bring to a simmer.
- Whisk in Parmesan cheese gradually until the sauce is smooth and creamy. Adjust Cajun seasoning to taste.
- Add cooked pasta and chicken back into the skillet and toss everything together until evenly coated with the sauce.
- Top with chopped parsley and extra Parmesan cheese if desired. Serve hot.
Notes
For extra heat, sprinkle in red pepper flakes. Swap in shrimp or sausage for a delicious twist. Great for meal prep – leftovers reheat beautifully!
