Ingredients

  • 1 pound rigatoni pasta
  • 1 pound boneless, skinless chicken breasts, diced
  • 1/2 cup unsalted butter
  • 4 cloves garlic, minced
  • 2 teaspoons Cajun seasoning (adjust to taste)
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Chopped fresh parsley, for garnish

Instructions

  1. Bring a large pot of salted water to a boil and cook rigatoni until al dente. Drain and set aside.
  2. In a skillet, melt 2 tablespoons of butter over medium heat. Add chicken, season with salt, pepper, and Cajun seasoning, and cook until golden and fully cooked, about 6-8 minutes. Remove chicken from skillet.
  3. In the same skillet, melt remaining butter. Stir in minced garlic and sauté for about 1 minute until fragrant. Add heavy cream and bring to a simmer.
  4. Whisk in Parmesan cheese gradually until the sauce is smooth and creamy. Adjust Cajun seasoning to taste.
  5. Add cooked pasta and chicken back into the skillet and toss everything together until evenly coated with the sauce.
  6. Top with chopped parsley and extra Parmesan cheese if desired. Serve hot.

Notes

For extra heat, sprinkle in red pepper flakes. Swap in shrimp or sausage for a delicious twist. Great for meal prep – leftovers reheat beautifully!
