Ingredients

  • 2 tablespoons olive oil (or butter)
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream (or half-and-half)
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon cayenne pepper (optional for heat)
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (or green onions), for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat and sauté chopped onion until soft and translucent, about 5 minutes.
  2. Add minced garlic and cook for 1 minute, stirring constantly to avoid burning.
  3. Pour in heavy cream and stir in Cajun seasoning and cayenne pepper. Let it come to a gentle simmer over medium-low heat.
  4. Simmer for 5-7 minutes, stirring occasionally, until slightly thickened.
  5. Season with salt and black pepper to taste, adjusting as needed.
  6. Remove from heat and sprinkle with fresh parsley. Serve warm over chicken, pasta, or your favorite dish.

Notes

To dial up the heat, toss in some jalapeños or red pepper flakes. Store leftovers in an airtight container in the fridge for up to 3 days. Freezes well too, just thaw and gently reheat when ready to use.
