- 2 pounds of fresh blue crab, cleaned
- 4 quarts of water
- 1/2 cup of Cajun seasoning
- 4 ears of corn, halved
- 1 pound of red potatoes, quartered
- 1 onion, quartered
- 4 cloves of garlic, crushed
- 1 lemon, cut into wedges
- Optional: 1 pound of smoked sausage, sliced
Instructions
- Bring 4 quarts of water and Cajun seasoning to a rolling boil in a large pot.
- Add potatoes and cook for 10 minutes until slightly tender.
- Add corn and onion, simmering for another 5 minutes.
- Carefully add the crab and optional sausage, cooking for 10 to 15 minutes or until crab turns bright orange.
- Stir in crushed garlic and lemon wedges; cook for 2 more minutes to infuse flavors.
- Drain and pour contents onto a newspaper-covered table. Serve with melted butter or Cajun cream sauce for extra flavor.
Notes
Avoid overcooking the crab to retain its sweet flavor. Taste your seasoning as you go, it’s the soul of the dish. Leftover boil water makes a great soup base. Spice lovers can toss in jalapeños. Want a lighter version? Use extra veggies like bell peppers or zucchini.
