  • 1 lb chicken breast, cubed and seasoned with Cajun spices
  • 12 oz cheese tortellini (fresh or frozen)
  • 1 bell pepper, diced (any color works)
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 tablespoon Cajun seasoning (adjust to preference)
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • Fresh chopped parsley, for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the seasoned chicken and cook for 5 to 7 minutes until browned and cooked through.
  2. Add in the chopped onion and bell pepper. Cook for 3 to 4 minutes until softened.
  3. Stir in the minced garlic and sauté for about 30 seconds until fragrant.
  4. Pour in the chicken broth and heavy cream. Stir well and let it simmer for 5 minutes to thicken slightly.
  5. While the sauce simmers, cook the tortellini according to the package directions. Drain and set aside.
  6. Add the cooked tortellini to the skillet and stir to coat everything in the creamy sauce. Season with additional Cajun spice, salt, and pepper as needed.
  7. Serve hot, topped with freshly chopped parsley for a pop of color and flavor.

Notes

To save time, use pre-cooked or rotisserie chicken. For added heat, throw in sliced jalapeños or your favorite hot sauce. Leftovers keep well in the fridge for up to 3 days — reheat with a splash of cream or broth to freshen it up.
