- 12 oz cheese tortellini (fresh or frozen)

- 3 garlic cloves, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 tablespoon Cajun seasoning (adjust to preference)
- 1 tablespoon olive oil
- Salt and black pepper to taste
- Fresh chopped parsley, for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Add the seasoned chicken and cook for 5 to 7 minutes until browned and cooked through.
- Add in the chopped onion and bell pepper. Cook for 3 to 4 minutes until softened.
- Stir in the minced garlic and sauté for about 30 seconds until fragrant.
- Pour in the chicken broth and heavy cream. Stir well and let it simmer for 5 minutes to thicken slightly.
- While the sauce simmers, cook the tortellini according to the package directions. Drain and set aside.
- Add the cooked tortellini to the skillet and stir to coat everything in the creamy sauce. Season with additional Cajun spice, salt, and pepper as needed.
- Serve hot, topped with freshly chopped parsley for a pop of color and flavor.
Notes
To save time, use pre-cooked or rotisserie chicken. For added heat, throw in sliced jalapeños or your favorite hot sauce. Leftovers keep well in the fridge for up to 3 days — reheat with a splash of cream or broth to freshen it up.
