Description

A creamy, spicy Cajun Chicken Pasta that’s full of flavor and soul, perfect for cozy weeknights or when you’re entertaining guests.


Ingredients

  • 12 ounces fettuccine or penne pasta
  • 1 pound boneless, skinless chicken breasts, sliced into strips
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 1 red or green bell pepper, sliced
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh chopped parsley, for garnish

Instructions

  1. Cook the pasta according to package directions. Be sure to salt the water generously. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Toss the chicken strips with Cajun seasoning and sear for 5-7 minutes, until browned and fully cooked. Remove and set aside.
  3. In the same skillet, sauté the bell pepper, onion, and garlic for 3-4 minutes until softened and fragrant.
  4. Reduce heat and stir in the heavy cream. Add Parmesan cheese and let it melt into a creamy sauce. Season with salt and pepper.
  5. Return the cooked chicken to the skillet along with the drained pasta. Toss well to coat everything in the sauce.
  6. Serve hot, topped with chopped parsley for a fresh finish.

Notes

To prep ahead, make the sauce and chicken first, then combine with pasta when ready to serve. Seafood like shrimp also works wonderfully in this dish. Adjust Cajun seasoning to control the heat level.
