- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups buttermilk
- 2 large eggs
- 1/4 cup unsalted butter, melted (or use coconut oil for dairy-free)
- Cooking spray or extra butter for greasing
Instructions
- In a large bowl, whisk the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, combine the buttermilk, eggs, and melted butter until smooth.
- Stir the wet ingredients into the dry ingredients gently. A few lumps are okay. Don’t overmix.
- Heat a nonstick pan or griddle over medium heat. Lightly grease with spray or butter.
- Pour 1/4 cup of batter for each pancake. Cook for 2 to 3 minutes, until bubbles form and edges are set.
- Flip and cook another 2 minutes until golden brown. Keep cooked pancakes warm while finishing the rest.
Notes
Let the batter sit for 10 minutes before cooking for fluffier pancakes. Leftovers can be stored in the fridge and reheated in the toaster. Add cinnamon or vanilla extract for extra flavor.
