Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

- Add egg and vanilla extract; mix until incorporated.
- In a separate bowl, whisk flour, salt, and baking powder. Gradually stir into wet ingredients until combined.
- Take a tablespoon of dough, flatten, add a bit of brown sugar filling or jam in the center, fold edges over, roll into a ball, and place on baking sheet. Repeat with remaining dough, spacing cookies apart.
- Bake for 12–15 minutes until edges are lightly golden. Let cool; they will set as they cool.
- Once slightly cooled, decorate with sprinkles if desired. Store in an airtight container for up to one week.
