- 8 slices of brioche bread (or substitute with challah)
- 4 large eggs
- 1 cup whole milk (or almond/oat milk)
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 2 tablespoons butter (for cooking)
- Maple syrup or toppings of choice
Instructions
- In a large bowl, whisk eggs, milk, vanilla, cinnamon, and salt until smooth.
- Heat a skillet or griddle over medium heat and melt 1 tablespoon of butter.
- Dip each brioche slice into the egg mixture, coating both sides well but not oversoaking.
- Cook the soaked bread slices on the hot skillet for 3–4 minutes per side, until golden brown.
- Continue cooking the remaining slices, adding more butter as needed.
- Serve warm with maple syrup, berries, or your favorite toppings.
Notes
Day-old brioche works best as it absorbs the mixture better. For a fun twist, add nutmeg or orange zest to the mix, or top with chocolate chips or nuts.
