Description
These soft and buttery brioche rolls are the perfect upgrade to any burger night. Lightly sweet, rich in flavor, and with a tender crumb, they bring a bakery-quality touch to your homemade creations.

- 4 cups all-purpose flour
- 1/2 cup sugar
- 1 packet active dry yeast (about 2 1/4 teaspoons)
- 1 teaspoon salt
- 1/2 cup whole milk, warmed
- 4 large eggs, at room temperature
- 1/2 cup unsalted butter, melted
- Egg wash (1 egg whisked with 1 tablespoon water)
Instructions
- In a large bowl, stir together warm milk and sugar. Sprinkle yeast over the top and let it sit until foamy, about 5 minutes.
- Add eggs and melted butter into the yeast mixture and whisk until smooth.
- Gradually mix in the flour and salt until a dough begins to come together. Use a dough hook or knead by hand on a floured surface.
- Knead for 8 to 10 minutes until dough is soft, elastic, and passes the windowpane test.
- Transfer dough to a greased bowl, cover, and let it rise in a warm place for 1 to 2 hours or until doubled in size.
- Deflate the dough and divide into 8 equal portions. Shape into balls and place on a lined baking sheet. Cover and proof for another 30 to 45 minutes.
- Preheat oven to 375°F (190°C). Brush tops with egg wash for a glossy finish.
- Bake for 15 to 20 minutes or until golden. Cool on a wire rack before slicing and serving.
Notes
For extra flair, sprinkle sesame or poppy seeds on top before baking. Store any leftovers in an airtight container for up to 3 days, or freeze for a month. These are also excellent for sliders or breakfast sandwiches.
