Instructions
- In a bowl, beat eggs with salt and pepper. If using bacon or ham, chop and mix into eggs.
- Heat a skillet over medium heat, melt 1 tablespoon of butter, and coat the pan.
- Scramble eggs until just set, then remove from heat.
- Wipe skillet clean. Place cheese on two slices of bread, layer with scrambled eggs, and top with the other slice.
- Melt 1 tablespoon butter in skillet, grill sandwich 3-4 minutes per side until bread is golden and cheese is melted.
