Ingredients
- 12 slider buns (whole wheat if preferred)
- 12 slices of bacon (turkey bacon works too)
- 6 large eggs (add one more if desired)
- 1 cup shredded cheddar cheese (or mozzarella, pepper jack, etc.)
- Salt and pepper, to taste
- Butter, for toasting (try garlic butter for extra flavor)
Instructions
- In a skillet over medium heat, cook the bacon until crispy. Drain on paper towels, leaving a bit of grease in the pan.
- Crack the eggs into a bowl, season with salt and pepper, and whisk well.
- Pour the eggs into the same skillet over medium-low heat. Stir gently until the eggs are just set, around 3–5 minutes. Mix in half the cheese until melted.
- Slice the slider buns in half. Place bacon and scrambled eggs on the bottom half of each bun. Top with remaining cheese.
- Add a bit of butter to the skillet. Place the assembled sliders in, cover, and toast for about 3 minutes until the buns are golden and cheese is melted.
Notes
Avoid overcooking the eggs—they’ll keep cooking slightly after removing from heat. Don’t overcrowd the skillet while toasting the buns to ensure even crisping. For a tasty twist, marinate bacon in maple syrup before frying. Add spinach or tomatoes for extra nutrients, or swap in avocado for cheese. Great with fresh fruit or a side salad. Try it with salsa or hot sauce for a kick. Assemble ahead and reheat in the oven when ready to serve.
