- 3 tablespoons unsalted butter
- 1 package (10 oz) mini marshmallows
- 6 cups Rice Krispies cereal
- 1/2 cup blueberry puree
- A pinch of salt
- Non-stick cooking spray
Instructions
- Melt butter in a large saucepan over low heat. Add marshmallows and stir until completely melted and smooth.
- Remove from heat, add a pinch of salt, and stir in the Rice Krispies cereal until evenly coated.
- Spray a 9×13-inch baking dish with non-stick spray. Press in half of the cereal mixture, drizzle half the blueberry puree, add the remaining mixture, and top with the rest of the puree. Swirl gently using a spatula.
- Let set at room temperature for 30 minutes. Slice into bars and serve. Store in an airtight container for up to 3 days.
Notes
To make blueberry puree, blend fresh or frozen blueberries until smooth. You can strain for a silkier texture. These treats can also be frozen between parchment layers for up to one month. Optional add-ins: chocolate chips or chopped nuts.
