- 3 large eggs
- 1 cup rolled oats
- 1 teaspoon vanilla extract

- 1 teaspoon baking powder
- 1/4 teaspoon salt
- Butter or cooking spray, for greasing the baking dish
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish with butter or cooking spray.
- In a large bowl, mix together cottage cheese, sugar, eggs, and vanilla extract until smooth and creamy.
- Stir in rolled oats, cinnamon, baking powder, and salt until well combined.
- Carefully fold in the blueberries; no need to thaw if using frozen.
- Pour the mixture into the prepared baking dish, smoothing it out evenly.
- Bake for about 45 minutes, or until the top is golden and the center is set.
- Let it cool slightly before serving. Add a drizzle of honey or a dollop of whipped cream if desired.
Notes
Avoid overmixing the batter, especially when folding in the berries. Store leftovers in the fridge for up to 3 days, great chilled or lightly reheated!
