  • 3 large eggs
  • 1 cup rolled oats
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • Butter or cooking spray, for greasing the baking dish

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish with butter or cooking spray.
  2. In a large bowl, mix together cottage cheese, sugar, eggs, and vanilla extract until smooth and creamy.
  3. Stir in rolled oats, cinnamon, baking powder, and salt until well combined.
  4. Carefully fold in the blueberries; no need to thaw if using frozen.
  5. Pour the mixture into the prepared baking dish, smoothing it out evenly.
  6. Bake for about 45 minutes, or until the top is golden and the center is set.
  7. Let it cool slightly before serving. Add a drizzle of honey or a dollop of whipped cream if desired.

Notes

Avoid overmixing the batter, especially when folding in the berries. Store leftovers in the fridge for up to 3 days, great chilled or lightly reheated!
