Ingredients

  • 2 cups fresh blueberries
  • 2 cups corn kernels (fresh or frozen)
  • 1 cup feta cheese, crumbled (or goat cheese for variation)
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper, to taste

Instructions

  1. Rinse blueberries and corn. If using frozen corn, warm slightly and let cool.
  2. In a mixing bowl, combine blueberries, corn, feta, red onion, and basil.
  3. Whisk olive oil, balsamic vinegar, salt, and pepper in a separate bowl. Pour over salad.
  4. Gently toss the salad to combine and coat all ingredients.
  5. Chill in the refrigerator for 30 minutes before serving for best flavor.

Notes

Avoid overmixing to preserve the texture of the blueberries and feta. Add dressing just before serving if making in advance.
